Daniel Garner is a chef of Japanese cuisine by discipline, by training, and by close to two decades in its kitchens. The ingredient leads, the season sets the terms, technique exists to let both speak. A philosophy he has carried unchanged through every kitchen he has run, in every city he has lived in.
